• 6 granny smith apples
  • 1 cup brown rice flour
  • 1 cup rolled oats
  • 1 cup coconut
  • the rind of one lemon
  • 2 tsp cinnamon
  • 1/4 cup organic raw honey
  1. Thinly slice apples and stew lightly in a saucepan with 1/4 cup water and a generous squeeze of 1/2 a fresh orange
  2. Bring to boil and simmer for 10 minutes on low heat
  3. Cool apples and arrange in a shallow ovenproof dish;
  4. Combine the rice flour, oats, rind, cinnamon and mix thoroughly.
  5. Warm the honey and add to the mixture, stirring to make a crumble.
  6. Spread the crumble carefully over the fruit.
  7. Bake in preheated 180 degrees oven for approximately 15 minutes or until lightly browned and crunchy.
  8. Serve with natural yoghurt.
